Last week, I wrote to you about the local development project in Guanabacoa, Bacoretto. Today, I want to tell you how this warm enterprise prepares its products to offer artisanal flour made from rice, plantain, and yucca, mainly for celiac people in Cuba.

All the equipment used to process and refine the flour was donated by non-governmental organizations (NGOs) from several countries.

The rice, plantain, and yucca (the main ingredients) go through different processes to obtain flour with good texture and quality. Another ingredient they use is cocoa because it is gluten-free and adds flavor and color to the products they make, such as sweets for celiacs. They also use corn flour and cornstarch because they are also gluten-free and mix them with the rice, plantain, and yucca flours to add more flavor and texture. When mixed, the flour becomes finer and less grainy, resulting in better performance for gluten-free recipes like breads, sweets, etc.

After processing and mixing the flours, each ingredient is ground to obtain a finer flour, ideal for gluten-free recipes.

Then, the flour is packaged, ready for sale and consumption by celiac people or those seeking to maintain a healthy diet.

This artisanal method developed in Bacoretto guarantees natural, nutritious, and contamination-free products.

Finally, you’re probably wondering why the name Bacoretto. I asked myself the same and thought there was something special behind it, but there isn’t; it was simply a name chosen to catch attention 😁.

Hola a todos los miembros de la comunidad.

La semana pasada les escribí sobre el proyecto de desarrollo local de Guanabacoa, Bacoretto. Hoy
quiero contarles como el cálido emprendimiento, prepara sus productos para ofrecer harina artesanal hechas a base de arroz, plátano y yuca, a personas celíacas en Cuba, fundamentalmente.

Todos los aparatos que se utilizan para procesar y refinar harina fueron donados por organizaciones no gubernamentales (ONG) de varios países.

El arroz, el plátano y la yuca (los ingredientes principales) pasan por diferentes procesos para obtener una harina con buena textura y calidad. Otro ingrediente que utilizan es la cocoa, porque no contiene gluten y le da sabor y color a los productos que elaboran, como, por ejemplo, dulces para celíacos. La harina de maíz y la maicena también lo utilizan porque, tampoco tienen gluten y la mezclan con las harinas de arroz, platano y yuca, porque aporta más sabor y textura, cuando se mezclan, la harina queda más fina y menos arenosa, lo cual se traduce en un mejor rendimiento para las recetas para celíacos, como panes, dulces, etcétera.

Luego de procesar y mezclar las harinas, cada uno de los ingredientes se muele para obtener una harina más fina, ideal para recetas sin gluten.

Después, la harina se envuelve en paquetes, listos para la venta y el consumo de personas celíacas o que buscan mantener una dieta saludable.

Este método artesanal que se elabora en Bacoretto garantiza productos naturales, nutritivos y sin contaminación.

Por último, seguro te estés preguntando, por qué el nombre Bacoretto, yo también me pregunté lo mismo y creí que había algo especial detrás, pero no es así; simplemente fue el nombre escogido para llamar la atención 😁.
