Savoury Sweet Potato and Fresh Garden Herbs: A Quick Weeknight Recipe
Some nights you really do not know what to make. Usually, creativity takes over. I had some sweet potatoes in the fridge and a garden full of nice herbs that begged to be harvested. So I did the most logical thing and cut everything up and threw them together to make a savoury sweet potato dish with fresh garden herbs.
Cooking with your own homegrown ingredients is an incredible feeling. Your grocery shop becomes the garden, and it is always so productive when you look after it. Plus, it is much healthier in my opinion. The ground that it is grown in and the lack of pesticide and herbicide makes it a lot healthier. Moreover, the garden yields a variety that the shops cannot match.
So without further ado, please follow along with me to make this incredibly simple dish!
Ingredients
For dish, you will need a couple of exotic ingredients, but most can be substituted:
- A couple of sweet potatoes,
- A bunch of swiss chard leaves,
- A bunch of garlic chives,
- A bunch of dandelion leaves,
- A bunch of amaranth leaves,
- An onion, and
- Some garlic.
Method
Firstly, you will need to cook the sweet potato. Start by cutting it up into small cubes.
Cook them in a little oil until golden brown. Cooking it in this manner, makes them much tastier and better. It makes them more savoury than sweet.
Whilst this is going on, you can chop the leaves into smaller pieces.
When you have chopped the onions and garlic and swiss chard stems, you can fry and cook them as well.
After they have browned as well, you can add the leaves to them and cook the leaves a little.
After they have barely cooked, add the sweet potato. The dish is then basically done!
To garnish, I add some balsamic reduction and sesame seeds. This gives the dish extra savoury flavour.
You can also add more ingredients, like some bacon or nuts or feta cheese. But as it was, the dish was amazing and really tasty. Even my mom who rarely likes these types of dishes asked for more!
This is such a simple dish to make, I really hope you will do so! Not only is it healthy, it is so tasty and good. It is amazing how much of a difference homegrown ingredients can make.

I just had sweet potato for my dinner tonight. I roasted them with garlic and turmeric and then made a coleslaw with tahini, it was yum. Love all your wild greens though. It all looks so good xxxx
That sounds really tasty. I am going to try that! Sweet potato works so well with spices; they soak everything up. I add them to curries. It gives such a nice sweet taste but it also helps to thicken the sauce. Thank you so much.

It is for sure the best feeling. I love to pick the things fresh. You will never get fresher, the shops or even farmers' markets cannot have it as fresh. Nor will they have the variety!
Historically I find fresh from small corner shop run by my Indian friends, we have two in close proximity who travel inland to collect much of the produce. Just 5 kilometers inland the soil is excellent between the sugar cane fields, many small scale farms with some bigger ones found between South Coast and Pietermaritzburg. Always purchase seasonal.
That is the best way to shop yes! Plus, if you can grow seasonally it is even better. But I have seen so many things actually grow out of season in the Cape where I live because of the good weather.
Soil is better quality being inland, much like along the coastline here. Support small farmers who rely on the income. Herbs in a controlled area with additional requirements to soil helps alleviate having to purchase, very limited though.
So true. Support those who need it the most and grow what you can. It is about cutting out those middle man structures. It is them who take most of the money.
Farmers are struggling we are still fortunate to have small stalls with some selling along the side of the road. I do keep some tinned produce for emergencies always check no dents and sell by date.
That is a real worry for us right? I do not have lots of storage space or goods to store, but many things grow here. I am lucky to have many seeds stored away. Some foods, like marog grow very quickly and it is very healthy.
Fresh is best, small back up for emergencies always good to have.
It is really something we need to invest in nowadays. At the beginning of all the loadshedding I was happy with the little rest I could get from tech being down for a little while. Now it is impeding with work and so on. It is just not workable.
Prepare as much as you able so when electricity is available you can get as much up as possible, water is more of a concern.
Vote when we get there to make change, self inflicted problems if we don't!
