My garden herbs are still doing well because the season and temperature are ideal for them. Shiso is one of the herbs in good condition in my garden.

Last year, the shiso did well too, but it didn’t produce flowers like it has this year. The shiso flowers are beautiful, resembling mint flowers. I kept and dried them to collect seeds for the next season.

My mother sent me shiso-pickled umeboshi before, and I saved the juice because I wanted to make a shiso dressing when my garden’s shiso leaves were ready. Shiso leaves produce a vivid, colorful pink juice.

The flowers are also edible, so I love eating the entire shiso plant. The green parts, in particular, are especially delicious.

I also planted shiso seeds in planters, and these have thrived the best this year. The flowers lasted a long time, and now I’m drying them in the shed to make dried shiso flakes and seeds for next spring.

Some leaves are turning a very dark purple, while others are greenish, resembling the Ooba herb. I love both types.

Chives and shiso are growing together like this. I leave some in the garden instead of picking everything, hoping they’ll grow back naturally next spring.

I soaked my garden’s shiso leaves and flowers in the leftover umeboshi juice. Finally, they look ready. It is super pink and fragrant. I made shiso dressing.

Ingredients:

Umeboshi juice and shiso leaves: 3-4 tablespoons
Olive oil: 2-3 tablespoons
Sugar: 2 tablespoons
Rice vinegar: 2 tablespoons
Salt: Already included in the umeboshi juice, but if you prefer a saltier taste, you can add more.

I prepared a fresh green salad with the last of my garden’s green beans.

I poured the shiso dressing on the salad and served it with salmon and quinoa. It was very tasty!

庭のハーブは天候がちょうどいいのもあって、調子がいいです。中でもシソはとてもコンディションが良いです。

去年もよく育っていたのですが、今年はシソの花が咲き乱れています。シソの花はたいへん美しく、ミントの花とよく似ています。花をとって乾かし、来年の春のために種を取ろうと思います。

母が送ってくれたシソの梅干しの汁をとっておいて、庭のシソの葉ができたら混ぜ合わせてドレッシングを作ろうと考えていました。シソの葉は色鮮やかでビビットなピンク色の汁になります。

花の部分も食べることができます。私はまるごと全部食べてしまいます。緑の部分は特においしいです。

プランターにもシソの種を植えました。このプランターのシソは今年いちばんよく育っています。花はかなり長い間咲いていました。この花を採って乾燥させ、シソのふりかけと種を作ろうと思っています。

いくつかのシソの葉は濃い紫色で、別のシソの葉は緑っぽい大葉のような色になります。どちらもおいしいです。

チャイブとシソが並んで育っています。いくつかのシソは庭にそのまま残しておきます。来年、自然に育ってほしいと思っています。

庭から採れたシソの葉をとっておいた梅干しの残り汁に漬け込みました。出来上がりは真っピンクになりました。早速、紫蘇ドレッシングを作りました。

材料:

梅干しの残り汁: 大さじ3-4
オリーブオイル: 大さじ2-3
さとう: 大さじ2
酢: 大さじ2
塩: すでに梅干しの汁の中に塩が入っているので、お好みで足してください。

庭でとれる今年最後のインゲン豆をのせた新鮮なグリーンサラダを作りました。

出来立ての紫蘇ドレッシングをたっぷりかけて、シャケとキヌアと一緒にいただきました。おいしかったです！
