I Finally Made It
Beautiful Sunday to all my Hive Learners! It's another Sunday of creativity, so relax and read through as I share how I make my delicious Moi Moi for Sunday Jolli. Moi Moi is a popular dish in Nigeria made from beans. Many people still find it difficult to remove the coated skin from beans, but in this article, I will show you a quick 5-minute method to get it done without much effort. Let’s get started🥰
Steps:
The amount of Moi Moi you make determines the quantity of ingredients you use. Here’s what I used for this recipe:
1 Mudu of Beans
A combination of eggs, crayfish, seasoning cubes, etc.
1 cup of vegetable oil
Salt to taste
A mixture of onions, shobo, and red pepper (Shobo gives it a reddish color)

Washing Off the Outer Coat:
First, I poured the beans into a mortar and added half a cup of water. I started pounding the beans gently, which is the easiest way to remove the outer coat. It took about 10 minutes to finish this process. Whenever necessary, I added a little more water and continued pounding moderately until most of the outer coat started coming off.
As I pounded, I topped up with a small quantity of water every 3 minutes, especially when it seemed like a good portion of the beans had shed their coat. Once all the outer coats were off, I poured enough water into the bowl so that the outer coat would rise to the top. I then sieved off the outer coats and repeated the process. They were still few beans with their coats on, I peeled them off by hand and kept changing the water until I had only the white beans left.
Now that the beans were clean, I prepared them for grinding.
Blending and Preparing the Mixture:
After I blended the beans along with pepper a, onion, and ginger. I added the rest of the ingredients listed above, with the right amount of water, and stirred everything together thoroughly.
Wrapping and Cooking:
Next, I boiled my eggs, removed the shells, and sliced them as desired. I used white nylon for wrapping the Moi Moi mixture. I scooped a good quantity of the blended beans into the nylon, added a slice of egg, and repeated the process until all the mixture was wrapped.
I placed the wrapped Moi Moi into a pot, added enough water, and covered to boil. After boiling for 20 minutes, my Moi Moi was ready for consumption.
Whenever I want to make this delicious food and I remember how much a Mudu of Beans cost, it discourages me but I decided to finally close my eyes to purchase it at last. My delicious Moi Moi for Sunday Jolli came out delicious just as I wanted. Cheers and thanks for reading my post.

3 commentsIt's been a while I've had moi moi and this is because the entire process is stressful and no one here is willing to go through any of that 😂😂... But this looks amazing, I'm sure they taste great too.
