Summer Squash One Pan Dinner - by Sunscape
When you have so many vegetables from the garden you need to use them quickly. That summer night, I chopped everything up into bite-sized pieces and made a one-pan meal.
The last yellow summer squash had been picked and I had a large zucchini too. Of course, there were plenty of tomatoes on hand. I like making this meal during the summer months since it is quick and easy to make. That allows for more back-porch-sitting, you know I love porch time with Mika.
I cut up a few potatoes and pre-boiled them for about 12 minutes or so, just to get them slightly tender. The meat I used in this dish was a mixture of hot and sweet Italian sausage, which I removed from the casings. I added a few florets of broccoli, sprinkled with salt and pepper, and then drizzled it all with olive oil. Tossed it all together to coat all the pieces and baked it for 30 minutes at 375°F.
I then removed the pan from the oven to top the dish with shredded cheese, then baked it for another 15 minutes. That was fast and so easy to throw together. It is a great way to use vegetables when the garden is bursting with food.
Well, that is that, a one-pan meal and hardly any dishes to wash. After dinner can you guess where I was, you got it, back on the porch. It's wine time!

Absolutely, I love leftovers, they also make for easy lunches during the week.

I call my version of this "summer stew." I don't have the variety that you do, so mine is much simpler, and I cook it all on the top of the stove, mostly sauteed. I freeze this stuff, and have nice batches of summer on the plate in the dead of winter.
That is a great idea, I have never thought to freeze the summer dish. I will definitely remember that for next time, thanks, @owasco.

I love making baked (mostly) veggie pans no matter if it's in summer or winter. It will be a full dish by itself and left-overs may be a side for a future one. What's not to love?
Absolutely, @oceanbee I also like making the summer squash dish with fall root vegetables which is always tasty. Leftovers are the best in our house for lunches.
Yum @sunscape, that's my kind of meal, I love one-pot dishes. Roasting it in the oven must be so delicious, and the added bonus of sitting on the porch, makes it even better!
One-pan dishes are so easy and it sure allows more porch time, my favorite part of the day.

Absolutely, Pam it is such an easy meal with all the veggies from the garden. I imagine turnip, beetroot, rutabaga, and parsnips would be amazing for a fall dish.
Are you eating up everything all at once? This meal is so delicious by merely looking that I wouldn't hesitate to taste.

There are so many veggies that It makes for a perfect one-pan meal. I have plenty of the harvest frozen already. This is an easy way to use them up when they are plentiful.
