说到吃生煎,我真的是天天让我吃,我都不会腻。
生煎的好坏不在于外皮的厚薄,而是它做出来的味道。宁波生煎分成两个派系,一种是不发面(就是外面的皮)但汤汁浓郁,就是上面有白芝麻的这种,这种生煎汤汁鲜美无比,一口咬下去汁水会飙出来,要当心烫到嘴巴,我一般是咬一个小洞,再把汤汁吸干。刚刚出炉的生煎真是好吃到根本停不下来,一般我会搭配点白粥和小菜,解解腻。
第二种就是嵊州生煎,它是发面派的代表,面皮松软饱满,个头会小一点,这家店我已经从6毛一个,吃到了1元一个,底壳金黄焦香无比。它的肉馅非常鲜美,由于是发面会把汤汁吸到面皮里,所以汤汁少了点但是皮会非常好吃,是别家生煎店做不出来的。这种生煎吃的同时,我一般会配一碗小馄饨或者紫菜汤。
生煎包子最好趁热吃,这样才能吃出生煎包的真谛!冷了之后表皮会凹进去显得非常难看,不过大多美食一般都是趁热吃才好吃。
第一种生煎包个大,一般我只能吃6只,第二种可以吃10个以上,当然一般一家店只会做其中一种,两种同时做的少之又少。
