Preparar carne mechada es literal una odisea; para muchos es tedioso, lleva muchos pasos y tiempo; personalmente me encanta su sabor y su nobleza ya que al estar lista la podemos combinar con diferentes carbohidratos y así prepara deliciosos platillos, pasapalos y aperitivos. A pesar de que me encanta no la preparó tan a menudo como debiera, pero este fin de semana me animé he hice una carne mechada para preparar un plato típico venezolano Pabellón Criollo este consta de carne mechada, caraotas, arroz y plátano frito. Hoy te quiero compartir como preparo la carne:

Ingredientes:

500gr Carne para mechar puede ser Falda o carne de pecho
1 cebolla
2 dientes de ajo
Cebollín y ajo porro al gusto
1/2 cucharadita de mostaza
1 cucharada de salsa de soya
1 cucharada de salsa inglesa
Aceite para sofreír
Orégano
Sal

Paso a paso:

Primero debemos poner a hervir agua filtrada, cuando llegue a su punto de ebullición introducimos la carne, el cebollín y ajo porro más una pisca de sal para que se cocine hasta que ablande..

Nota: me gusta agregarle cebollín y ajo porro para sancochar la carne porque le agrega sabor a la carne.

Cocinar este tipo de carne toma su tiempo, ya que suele ser algo dura, por esta razón hay que colocarlo a cocinar con suficiente tiempo y agua 🥲 para que se pueda ablandar... A mí me tomo 2 horas en total, solo estuve pendiente de echarle el ojo de vez de cuando, sabemos que está lista cuando al pullar con un tenedor este pasa con suavidad.

Al está listo retiramos la carne del caldo y dejamos enfriar para poder manipular

Una vez fresca la carne podemos empezar a deshebrar esto es muy fácil, pues la hebra de la carne nos guía como debemos ir soltando..

Con la carne lista y deshebrada procedemos a picar la cebolla y ajo, a mi me gusta hacerlo en cuadritos; en un sartén coloque el aceite la cebolla y ajo para sofreír estos aliños, hasta que ablanden un poco para luego agregar la carne dejándola cocinar un poco junto a ellos...

Tomamos un poco de agua o el caldo sobrante dónde cocinamos la carne y se la agregamos a nuestra carne, también se aprovecha y se coloca: la mostaza y salsas mezclamos y tapamos, para que se termine integrar los sabores y cocinar.

Nota: si es necesario agregamos un poquito de sal.

Así queda lista la carne mechada

Este tipo de carne es muy versátil, la podemos acompañar con otros carbohidratos como arroz, alguna verdura sancochada, arepas, granos, también podemos hacer empanadas o simplemente comer sola...

Es un poco tedioso realizar esta carne, no les voy a mentir; pero el resultado es maravilloso queda deliciosa con muchisimo sabor ❤️

Even though I love it, I don't make it as often as I should, but this weekend I decided to make shredded beef to prepare a typical Venezuelan dish called Pabellón Criollo, which consists of shredded beef, beans, rice, and fried plantains. Today I want to share with you how I prepare the beef:

Ingredients:

500g beef for stewing, either skirt steak or brisket
1 onion
2 cloves of garlic
Chives and garlic chives to taste
1/2 teaspoon mustard
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
Oil for frying
Oregano
Salt

Step by step:

First, bring filtered water to a boil. When it reaches boiling point, add the meat, green onion, garlic, and a pinch of salt and cook until tender.

Note: I like to add green onion and garlic when boiling the meat because it adds flavor.

Cooking this type of meat takes time, as it tends to be somewhat tough, so you have to cook it with enough time and water 🥲 so that it can soften... It took me 2 hours in total, I just kept an eye on it from time to time. We know it's ready when you can pierce it easily with a fork.

When it's ready, remove the meat from the broth and let it cool so you can handle it.

Once the meat is cool, we can start shredding it. This is very easy, as the strands of meat guide us on how to pull it apart.

With the meat ready and shredded, we proceed to chop the onion and garlic. I like to chop them into small squares. In a frying pan, add the oil, onion, and garlic to sauté these seasonings until they soften a little, then add the meat and let it cook a little with them...

Take a little water or the leftover broth from cooking the meat and add it to the meat. Also add the mustard and sauces, mix and cover, so that the flavors blend and cook.

Note: add a little salt if necessary.

The shredded beef is now ready.

This type of meat is very versatile. We can serve it with other carbohydrates such as rice, boiled vegetables, arepas, beans, or we can make empanadas or simply eat it on its own...

I won't lie to you, it's a bit tedious to make this meat, but the result is wonderful. It's delicious and full of flavor ❤️
