Strawberry charlotte // Charlotte aux fraises [EN/FR]

Hello friends and food lovers! I hope you're all doing great 😁
Here it is, strawberry season is here 🍓 And strawberry season means: strawberry cake, strawberry tart, and especially strawberry charlotte!
This is one of the many cakes my mom likes to make for Sunday afternoon tea. And recently, she finally taught me how to make it. 😁
It's actually quite simple to prepare: you have to prepare the cream first, and then assemble the sponge cakes.
It's best to make it the day before for the next day; it's really better when it's rested overnight in the refrigerator!
Anyway, here's Mom's Strawberry Charlotte recipe, a cake for about 8 to 10 people 👇
Ingredients

- 125 grams of mascarpone;
- 75 grams of Philadelphia cream cheese;
- 15 cl of 30% fat whipping cream;
- 500 grams of fresh strawberries;
- 1/2 jar of strawberry jam;
- 36 to 42 sponge fingers;
- 2 tablespoons of icing sugar.
Preparation steps
I started by washing and hulling the strawberries:

Then, I started making the cream! To do this, I placed 125 grams of mascarpone in a bowl:

Next, I added 75 grams of Philadelphia cheese:

And 15 cl of whipping cream:

Then, I used my electric mixer to whip the cream. I started with 5 minutes on low speed, then 5 minutes on high speed.

Next, I added 2 teaspoons of icing sugar and continued beating for 5 minutes until the cream held its shape!

I then put it in the refrigerator.
And I began assembling the strawberry charlotte.
To moisten the sponge fingers, I poured a little strawberry jam into a shallow dish and added a little water (about 5 cl).

Next, I dipped my sponge fingers one by one, turning them over in the mixture and placing them in the bowl as I went.

For assembly, I chose to do it in a bowl. But it's also possible to do it in a springform pan.
I placed some kitchen string in the bottom of the bowl to make it easier to remove them from the pan, and placed my soaked sponge fingers on the bottom. Here's what it looks like:

Obviously, the number of sponge fingers depends on the size of your bowl.
Anyway, I then placed a layer of cream on the bottom:

Then, I added a few strawberries, which I mixed with the cream:

Then, I placed more sponge fingers on top:

And I started adding another layer of cream and a few strawberries.

Then, I placed more sponge fingers to close the strawberry charlotte and trimmed the edges so it was completely flat.

I then placed some plastic string on top and placed it in the refrigerator until the next day.
The next day, we were able to cut it and eat it with my family! Here's the result:

We loved it, it was delicious! 😋
Next time, I'll try to make a nice presentation on top by preparing a little more cream!
In short, it's a very simple cake to make that will please both young and old. 😁 It has a lovely strawberry flavor 🍓 And the cream inside is quite light, making it easy to eat. It's not a thick cream that makes you sick.

Ça y est, c’est la saison des fraises 🍓 Et qui dit saison des fraises dit : gâteau fraisier, tarte aux fraises et surtout charlotte aux fraises !
C’est un des nombreux gâteaux que ma maman aime nous faire pour le goûter du dimanche. Et il y a peu, elle m’a enfin appris à le réaliser. 😁
C’est finalement assez simple à préparer, il faut d’un côté préparer la crème et de l’autre, assembler les gâteaux cuillères.
Le mieux est de la faire la veille pour le lendemain, c’est vraiment meilleur lorsqu’elle a reposé toute une nuit dans le réfrigérateur !
Bref, voici la recette de la charlotte aux fraises de maman, un gâteau pour environ 8 / 10 personnes 👇
Les ingrédients

- 125 grammes de mascarpone ;
- 75 grammes de fromage frais Philadelphia ;
- 15 cl de crème fleurette 30% de matières grasses ;
- 500 grammes de fraises fraîches ;
- ½ pot de confiture de fraises ;
- Entre 36 et 42 biscuits cuillères ;
- 2 cuillères à soupe de sucre-glace.
Les étapes de préparation
J’ai commencé par laver et équeuter les fraises :

Je les ai également découpées en petits morceaux :

Puis, j’ai commencé à réaliser la crème ! Pour cela, j’ai placé 125 grammes de mascarpone dans un saladier :

Ensuite, j’ai ajouté 75 grammes de fromage Philadelphia :

Et 15 cl de crème fleurette :

Puis, j’ai utilisé mon batteur électrique pour monter la crème. J’ai commencé par 5 mins à la vitesse minimale, puis 5 mins à grande vitesse.

Ensuite, j’ai ajouté 2 cuillères à café de sucre-glace et j’ai continué de battre pendant 5 minutes jusqu’à ce que la crème se tienne bien !

Je l’ai ensuite mise au réfrigérateur.
Et j’ai commencé le montage de la charlotte aux fraises.
Pour mouiller les biscuits cuillères, j’ai versé un peu de confiture de fraises dans une assiette creuse et j’y ai ajouté un petit peu d’eau (environ 5 cl).

Ensuite, j’ai trempé mes biscuits un par un, en les retournant dans le mélange et en les plaçant au fur et à mesure dans le saladier.

Pour le montage, j’ai choisi de le faire dans un saladier. Mais il est également possible de le faire dans un moule à charnières.
J’ai mis du fil alimentaire dans le fond du saladier pour faciliter le démoulage et j’ai déposé mes biscuits imbibés dans le fond. Voici ce que cela donne :

Évidemment, le nombre de biscuits cuillères dépend de la taille de votre saladier.
Bref, j’ai ensuite placé une couche de crème au fond :

Puis, j’ai ajouté un peu de fraises, que j’ai mélangé à la crème :

Ensuite, j’ai placé de nouveaux des biscuits cuillères dessus :

Et j’ai recommencé à placer une couche de crème et un peu de fraises.

Puis, j’ai placé des biscuits cuillères pour fermer la charlotte aux fraises et j’ai découpé les bords pour que ce soit tout plat.

J’ai ensuite placé du fil alimentaire dessus et je l’ai placé au réfrigérateur jusqu’au lendemain.
Le lendemain, nous avons pu le découper et le manger avec ma famille ! Voici le résultat :

Nous nous sommes régalés, c'était très bon ! 😋
La prochaine fois, je vais essayer de faire une belle présentation sur le dessus en préparant un peu plus de crème !
Bref, c’est un gâteau très simple à réaliser et qui peut plaire aux petits et aux grands. 😁 Il y a un très bon goût de fraises 🍓 Et cette crème à l’intérieur est assez légère, ça se mange facilement. Ce n’est pas une crème épaisse qui écoeure.
Il existe tout plein de recettes pour réaliser une charlotte aux fraises, mais je trouve que celle-ci est très simple et rapide à réaliser ! J’espère que cela vous a donné envie de tester 🍰
