An Apple Eats: Meal Prep Week2

Welcome to another blog post of my An Apple Eats blog series.
In this blog I am sharing with you my meal prep last week.This meal prep is a bit simple but it took about 5 days for me to finish because I've been losing appetite lately.
When I went to get groceries, I saw some chili con carne mix but I don't think it was enough for a few days worth of meal so I had the idea of making a few burritos with it. I also did lazy style teriyaki chicken for protein.
Here's what I made:

- Brown Rice - cooked as usual
- Hard-boiled eggs - 8mins then cold water bath
- Chili con carne burritos
- Boiled brocs
- Teriyaki chicken
- Banana
Recipes
Teriyaki Chicken
I unfortunately did not take pics while cooking this one. I think I was lazy. So here's just after it was cooked.
- About 2kg chicken breast
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp mirin
- 3 tsp sugar
- salt and pepper to taste
- sesame seeds - I ran out of the normal ones so I used black sesame seeds
- oil
- Cut chicken into 1 inch pieces. And fry until brown in a preheated pan. Remove chicken from pan.
- Mix soy sauce, honey, mirin, and sugar and pour mixture into the pan. Let it simmer until a bit thick.
- Add back chicken into the pan and coat with the teriyaki mixture.
- Serve and drizzle sesame seeds.
Chili con Carne Burrito
- 300g ground pork meat
- 1 pack chili con carne mix
- 1 can red kidney beans
- left over rice (I had about 200g for this)
- pre-packed lettuce salad mix
- 8 tortillas
- Cook meat until brown in a pan. Then add chili con carne. Let meat absorb the flavor for a few minutes.
- Add in rice and beans. Let it cook for 10 mins.
- Let it cool.
- In plate, place a tortilla and scoop a decent amount of cooked chili con carne, and add some lettuce.
- Wrap it tightly and wrap with foil.
- Optional: You may freeze it and store for a bit longer.
You may reheat it directly into an oven (not microwave oven) with the foil.
Or unwrap the foil and reheat in a pan.
