If you were to ask what the most popular dish in my city is, the answer would undoubtedly be: Büryan. Although our neighboring cities claim ownership of the dish, those who are impartial know which city it belongs to. Büryan is a pure meat dish. Because it's made in restaurants, it's mostly eaten at lunchtime. The preparation of the dish is quite lengthy. The meat from 6-12 month old kids is rested for a day after slaughter, then cooked in tandoor ovens for about 2-3 hours. Initially, a basin is placed at the bottom of the tandoor. As the meat cooks, the fat that drips from the meat collects in the basin. This fat forms the basic structure of the "Avşor Soup," which I will discuss shortly.

My friend and I went to a charming restaurant on the ring road to have Afshor soup. The walls were adorned with photographs of historical buildings. The tables and chairs, along with the stove used for heating, all aimed to give the place a historical feel.

How to make it

The dish is actually very easy to make. It's not a dish you can make at home; it's a bit laborious. It's difficult to achieve the flavor and taste without a tandoor oven. If you go to a restaurant and buy biryani oil and meat, it will be easier to make at home. The hardest part is obtaining and finding the biryani meat and oil. In a pot, add the biryani meat, biryani oil, water, red pepper paste, and tomato paste. Then, cook over low heat for about an hour. Afterwards, serve hot with warm bread.
