Lontong with Sayur Tauco/Compressed Rice Cake and Vegetable Stew with Fermented Soybean Paste
Hi bloggers and food lovers. Today I’m going to share a homemade lontong recipe; lontong is a must-have dish during Eid at my house. Lontong is a rice-based dish wrapped in banana leaves into a long shape and cooked by boiling until firm. It has a chewy texture and a fragrant aroma. This lontong can also be served with other sauces like satay or other regional specialties. This time, I’d like to introduce it with a savory and delicious tauco( fermented soybean paste ) vegetable stew. Alright, let’s get started
**Ingredients: **
- 1 roll of banana leaves
- 1kg of rice
- 1 tbsp salt
- skewers
- water
- 2 liters thin coconut milk
- 400 ml thick coconut milk
- tauco vegetable mix (long beans, melinjo, pea eggplants, green chili, red chili, fermented soybean paste, shrimp)
Steps:
- Cut the banana leaf into pieces about 30 cm long
- Roll the leaf using a bottle as a guide, then fold the bottom and secure with a skewer
- Fill with rice until it reaches one-quarter of the leaf’s fold
- Secure the top of the leaf with a skewer like this
Repeat until all the rice is used
Place the rice-filled banana leaf parcels into the pressure cooker
Fill the rice-filled parcels with water until full, then add water to the pressure cooker’s water level mark
Close the pressure cooker lid and cook for 1 hour 30 minutes
- Once cooked, let the lontong cool
- While waiting for the lontong to cook, add the frozen tauco vegetables to a pot
- Add thin coconut milk and thick coconut milk
Bring to a boil
Turn off the heat
Peel the banana leaves off the lontong and slice the lontong
Pour the tauco vegetable stew over it
You can add noodles, slices of rendang, and crackers as toppings
- The lontong with tauco vegetable stew is ready to eat
