Oatmeal and Yogurt Cookies with Chocolate Chips [EN]//[ES]
I won't say they're diet cookies, because the sugar content is really high for the amount, in my opinion; however, if you're allergic to gluten or don't want to eat wheat flour, this is a delicious solution. On the other hand, by adding Greek yogurt instead of butter, the amount of fat is much lower; their texture is truly divine, and they become a guilt-free treat. Mathias fell in love with these cookies, even though he doesn't like oatmeal cookies. In fact, he told me they tasted like cereal and that all that was missing was adding them to a bowl of milk, ha ha ha.
I made this recipe with Mathias. To be honest, he wanted to eat cookies just as much as I did, and it's super easy to make, so it's an ideal recipe to make with the little ones at home. Join me and I'll show you how we made it.
Ingredients
| 160 gr | Greek Yogurt |
| 250 gr | Oat flakes |
| 50 gr | Cornstarch |
| 200 gr | Sugar |
| 100 gr | Chocolate drops |
| 1 | Egg |
| 1 tsp | Vanilla |
| 1 tsp | Baking soda |
Add the yogurt, vanilla, and sugar to a bowl, followed by the egg, and beat until well combined.
I used rolled oats; however, I put them through the food processor to make them much finer, but not as fine as oat flour, because I wanted the cookies to have some of the texture of a traditional oatmeal cookie. We mixed them with the cornstarch and baking soda, and added them to the egg, sugar, and yogurt mixture. Once combined, we added the chocolate chips and mixed everything together well.
To portion the cookies, I decided to put the dough in a piping bag and pipe it onto a baking sheet lined with wax paper. Bake in a preheated oven at 350°F for 12 minutes, or until golden brown on the bottom. Let cool and enjoy.
As I mentioned before, they taste like the cereal we buy at the supermarket; their texture is delicious, they are not greasy like some cookies tend to be, and the neutral flavor of the yogurt allows the vanilla and chocolate flavors to come through perfectly. The truth is, I fell in love with this recipe, and we have embraced it.

No diré que son galletas dietéticas, pues el contenido de azúcar es realmente alto para las cantidades, a mi parecer; sin embargo, si eres alérgico al gluten o no deseas comer harina de trigo, esta es una solución deliciosa, por otro lado, al agregar yogur griego en lugar de mantequilla, la cantidad de grasa es muchísimo menor; su textura es realmente divina y se convierten en un placer sin tanta culpa. Mathias quedó enamorado de estas galletitas, siendo que no le gustan las galletas de avena; de hecho, me dijo que sabían a cereal, que solo faltaba agregarlas en un tazón con leche, jajaja.
Esta receta la preparé con Mathias, la verdad, él quería tanto como yo comer galletitas, y la preparación es superfácil, por lo que es una receta ideal para hacer con los más pequeños de la casa. Acompáñame y te muestro cómo la preparamos.
Ingredientes

| 50 gr | Fécula de Maiz |

| 100 gr | Chocolate en gotas |

| 1 Cdta | Vainilla |
| 1 Cdta | Bicarbonato de sodio |
Agregamos en un tazón el yogur con la vainilla y el azúcar, seguido del huevo, y batimos hasta integrar muy bien.
Utilicé avena en hojuelas; sin embargo, la pasé por el procesador para dejarla mucho más fina, no tanto como la harina de avena, pues quería que las galletas tuvieran un poco de esa textura de una galleta de avena tradicional, la mezclamos con la fécula de maíz y el bicarbonato de sodio, y agregamos a la mezcla de huevo, azúcar y yogur, una vez integrado, adicionamos las gotas de chocolate, e integramos bien.
Para porcionar las galletas, decidí colocar la masa en una manga pastelera y con ella la fui colocando en una bandeja para hornear con papel encerado, llevamos a un horno precalentado a 180 °C por 12 minutos, o hasta que veamos que se han dorado por la parte de abajo, dejamos enfriar y disfrutamos.
Como lo mencioné antes, tienen un sabor a cereales de los que compramos en el supermercado; su textura es deliciosa, no son grasosas como lo suelen ser algunas galletas, el sabor neutro del yogur, permite que el sabor de la vainilla y el chocolate se perciban perfectamente, la verdad es que, esta receta me enamoró, y nos hemos casado con ella.
